Los Guardianes del Gusto – Duck - Bombabar

9695 MFW PutVicOnTable_Logo_DD03This June we’re celebrating the tradition of a long Sunday lunch with three courses and three amazing Victorian producers for Los Guardianes del Gusto - The Guardians of Taste as part of the Melbourne Food and Wine Festival's winter Roast Collection.

We’ll get started with a selection of tapas, think smoked bone marrow with parsley and migas and a warming pumpkin soup with pistachio. Next up, our friends at Great Ocean Ducks will be supplying free-range Pekin ducks from their property near Victoria's Great Ocean Road, rolled into a ballotine of chestnut and prune stuffing and finished with a Pedro Ximénez jus.

No roast would be complete without the humble spud, we will be serving organic duck fat-roasted potatoes from Andrew Wood’s Glenora Heritage Produce in Tooborac. It’s also the perfect time of year for Brussels sprouts, like all good Spanish vegetable dishes we’re serving ours with serrano-grade Jamón, supplied by free-range heritage pig specialists Greenvale Farm.

Finally, share creme catalana, a beloved Spanish take on the French crème brulée.

Noon - 3pm, Sunday 7th, 14th June and 21st of June.

$55 per person. First course of three tapas, a main of duck with all trimmings and creme catalan to finish.
