We have enjoyed our adventure into the world of The Aylesbury Restaurant and Rooftop and now we are going to return to the kitchen and our Spanish roots with Bomba Tapas Bar and Rooftop. Bomba is a Spanish workers bar.

Our commitment to local, fresh seasonal food remains but with Bomba! we want to go back to what we know and love - really flavoursome, simple, well executed and affordable Spanish tapas.

Jesse Gerner (Añada, Moro, River Café) and Andrew Fisk fresh back from his food tour of Spain (Añada, Cumulus Inc) will be heading up the kitchen. They both have a love of all things Spanish from their work and travel and will be serving fresh, festive, punchy food that is designed to share.

Our wine list by Shane Barrett (Sommelier at Circa, Beverage Manager Pearl and the Lucas Group) will focus on Indigenous Spanish varieties from small artesian producers.  Many of these wines we will import direct from Spain ourselves and will be new to the market in Australia.  All wines will be either $40 or $60 a bottle and $10 - $12.50 a glass.  There will also be a strong cocktail, sherry and vermouth list.

Kelly O’Loghlen (Taxi, Circa) will be running the floor and will be taking bookings for the dinning area, leaving the bar area for walk-ins.
The rooftop will be business as usual with tasty cocktails, beer, wine and tapas plus summer rooftop parties.

Partners Jesse and Vanessa Gerner, Shane Barrett, Andrew Fisk and Kelly O’Loghlen are really pumped to get Bomba open at the end of September.
