A classic mix of Bomba’s best vegetarian dishes, featuring:
House sourdough with olive oil & garlic
Tarago estate olives with pickles
Queso Manchego served with membrillo
Chargrilled King Brown mushrooms, walnuts, sherry & paprika butter
Broccolini with paprika aioli
Moorish spiced pumpkin, with romesco and labneh
Beetroot, grain & herb salad, goat’s curd
Chocolate torta with orange yoghurt cream

Description

Round One:
House sourdough with olive oil & garlic:
1.) Toast
2.) Rub with garlic clove & drizzle olive oil

Tarago estate olives with pickles: as served

Queso manchego with membrillo: remove all packaging & serve on a plate

Round Two:
Chargrilled King Brown mushrooms, walnuts, sherry & paprika butter:
1.) Remove lid from container & set aside walnut purée
2.) Heat mushrooms in the oven for 10 minutes at 180°C
3.) Smear walnut purée on serving plate
4.) Once they are hot, assemble mushrooms over purée & pour excess butter from container on top

Chargrilled broccolini with paprika aioli:
1.) Remove lid from container & set aside aioli
2.) Heat broccolini in the oven for 6 minutes at 180°C
3.) Once hot, serve on plate with aioli on base

Round Three:
Moorish spiced pumpkin, with romesco and labneh:
1.) Remove lid from container and take out seeds
2.) Heat pumpkin in the oven for 10 minutes at 180°C
3.) Spread romesco onto serving plate
4.) Once pumpkin is hot, assemble on top of the romesco, dollop labneh on the side and sprinkle seed mix on top

Beetroot, grain & herb salad and goat’s curd
1.) Combine beetroot, grains and dressing into a mixing bowl
2.) Add pinch of salt and pepper and mix together
3.) Smear goat’s curd onto serving plate/bowl and arrange salad on top

To Finish:
Chocolate torta with orange yoghurt cream: place torta on serving plate with cream dolloped on the side
