A fantastic selection of all of Bomba’s favourite dishes, featuring:
House sourdough with olive oil & garlic
Tarago estate olives with pickles
Jamon Duroc Serrano – cured pork
Spicy Cantimpalo – chorizo
Spiced lamb ribs with honey & yoghurt
Chargrilled King Brown mushrooms, walnuts, sherry & paprika butter
Pedro Ximinez braised pork jowl with fennel purée
Beetroot, grain & herb salad, goat’s curd
Chocolate torta with orange yoghurt cream

Instructions & Ingredients

ROUND ONE:
House sourdough with olive oil & garlic:
1.) Toast
2.) Cut garlic clove in half, rub onto the bread & drizzle olive oil
Tarago estate olives with pickles: as served
Jamon Duroc Serrano / Spicy Cantimpalo chorizo: remove all packaging & arrange on a plate
ROUND TWO:
Spiced lamb ribs with honey & yoghurt:
1.) Remove lid from container and set aside yoghurt
2.) Heat ribs in the oven at 180°C for 15 minutes
3.) Once cooked, remove lamb from the container and leave the excess fat. Serve with yoghurt on top
Chargrilled King Brown mushrooms, walnuts, sherry & paprika butter:
1.) Remove lid from container & set aside walnut purée
2.) Heat mushrooms in the oven for 10 minutes at 180°C
3.) Smear walnut purée on serving plate
4.) Once they are hot, assemble mushrooms over purée & pour excess butter from container on top
ROUND THREE:
Pedro Ximinez braised pork jowl with fennel purée:
1.) Remove lid from pork packaging
2.) Heat pork jowl in the oven for 10 minutes at 180°C
3.) Whilst pork is cooking in the oven, gently heat fennel purée in the microwave for 2 mins stirring every minute or until hot
4.) Once both are ready, pour purée into a serving bowl and spoon the pork jowl over it with the sauce
Beetroot, grain & herb salad and goat’s curd:
1.) Combine beetroot, grains and dressing into a mixing bowl
2.) Add pinch of salt and pepper and mix together
3.) Smear goat’s curd onto serving plate/bowl and arrange salad on top
TO FINISH:
Chocolate torta with orange yoghurt cream: place torta on serving plate with cream dolloped on the side
